Restauration et hygiène

L'hygiène laisse à désirer dans de nombreux établissements ! C'est le constat tiré par l'association professionnelle de la restauration et celle des chimistes cantonaux de Suisse. Ces deux organes faîtiers proposent un examen d'hygiène alimentaire obligatoire avant toute reprise d'établissement. Il y a le constat : 3 à 5 pour cent des établissements qualifiés d’insuffisants en matière d’hygiène. Le chimiste cantonal bernois parle même de lacunes qui se maintiennent à un haut niveau. Et puis il y a GastroSuisse, l'association professionnelle de la restauration, qui souhaite utiliser cet état de fait pour taper sur un clou déjà enfoncé à plusieurs reprises auprès de l’Office fédéral de la santé publique. Soit généraliser l’obligation de suivre des cours d’hygiène alimentaire au moment d’obtenir une patente ou une licence d’établissement. On en parle avec Marc Treboux, chimiste cantonal neuchâtelois, et Frédéric Haenni, membre du Conseil de Gastrosuisse et président de Gastrovaud.

Pour multiplier les services, un restaurateur demande de manger en une heure ! On en Parle reçoit François Gessler, président de Gastro Valais, pour vérifier le bien-fondé de cette pratique. Une auditrice a été surprise, lors d'une réservation dans un restaurant valaisan, qu'on lui signale qu'elle ne pourrait pas réserver une table pour plus de 60 minutes. Est-ce qu'un restaurateur a le droit d'imposer ce genre de restriction ? La réponse est simple. Le propriétaire ou le gérant d'un établissement a tous les droits à ce niveau. Dans la pratique -même si de nombreux établissements romands font plusieurs services dans la même soirée- signaler la durée lors de la réservation est considéré comme maladroit selon les professionnels.

Fribourg compte un nombre très élevé de restaurants de grande qualité qui font de cette ville l’une des plus gourmandes de Suisse. Les Trois Tours à Bourguillon, sur la falaise face à la ville, est un des meilleurs restaurants du pays. Alain Baechler le conduit depuis dix ans avec maestria. Premier service : le Restaurant de La Tour

Daniel Fazan nous invite à la table du Restaurant de la Tour. Situé à La Tour de Trême, dans la banlieue de Bulle, son chef refuse de figurer dans les tabelles des grands guides. Pourquoi un chef change-t-il de cap, tout en restant dans la maison qui a fait sa renommée, et pourquoi disparaît-il momentanément des tabelles des plus grands guides ? La réponse personnelle de Marcel Thürler : le besoin de renaître, éviter de se lasser, recréer un ambiance neuve. La cuisine de Marcel Thürler est toujours aussi pétillante, mais a baissé ses tarifs : plus grande accessibilité, communication plus directe, Bernadette et Marcel ont réussi leur pari. Le chef nous propose sa recette d’Epaule d’agneau confite sept heures, aux petits légumes printaniers croquants (à venir), une potée lente et cependant simple à réaliser.

Accord avorté sur la déclaration des convenience foods

Gastrosuisse explique son refus de déclarer les plats industriels sur les menus. Les discussions, menées avec des associations de consommateurs, n'ont pas abouti à un accord. Pas question d’indiquer par écrit, sur la carte des restaurants, les plats ou les mets achetés tout préparés à des fournisseurs spécialisés. Ces mets, fournis sous forme congelée, déshydratée ou sous vide sont ce que l’on appelle des convenience foods, de la nourriture conditionnée. Désigner ces plats n’est pas réalisable selon Gastrosuisse. Pourtant, des pourparlers étaient en cours depuis une année entre l’organisation des restaurateurs et celles des consommateurs. On en parle avec Frédéric Haenni, membre du comité de Gastrosuisse, et des représentants des associations de consommateurs.

Premier Service: restaurant "Le Montagne" à Chardonne

Un jeune couple, Laurence Dufour et le chef David Tarnowski ont réouvert il y a quelques mois à Chardonne "Le Montagne" qui succède aux Hébert, anciennement "À la Montagne". Cadre contemporain lumineux et soigné, cuisine d’une finesse légère, service attentif et sympathique, la renaissance est belle. Les prix sont raisonnables, la ligne est claire : une épure et la sensation limpide du zen à portée de tous. Une carte qui change chaque mois, des prix modestes en regard de la qualité des plats, tous les vignerons du village sont représentés. Oui, les Tarnowski vont compter à l’avenir et s’intégrer magistralement dans ce beau village-balcon sur Vevey et le Léman. (25.01.2008)

Vandaag hebben we het Stadsblad van Utrecht gehad, maar nu is mijn prioriteit echt op het project gericht.
